My take: I cant imagine how it must feel to be booked for 3 years in reservations. Overwhelming I would think. Who wants to re-invent? Why create a “chain” when you could create the way that the world sees food? Maybe, you re-create yourself. Maybe, you make the world around you see differently the way that they perceive food… taste… flavor. How would you like your food to taste? Perhaps, that’s what he wants you to ask. I believe he will take a more global approach. Call it “chain” if you will, but progression is what it is. You have to progress. Food is an art and he is a master.
